麦芽糖糊精生产工艺

麦芽糊精系列产品均以淀粉为原料,经酶法工艺控制水解转化而成。淀粉是由许多葡萄糖分子聚合而成的碳水化合物;它的分子结构中大部分是以。α—(1,4)键连接,少量是以α—(1,6)键连接。利用耐高温α—淀粉酶对淀粉的催化水解具有高度的专一性,即只能按照一定的方式水解一定种类和一定部位的葡萄糖苷键的特别性能,仅水解淀粉,不分解蛋白质、纤维素等。所以麦芽糊精是以玉米、大米等为原料,经酶法控制水解液化、脱色、过滤、离子交换、真空浓缩及喷雾干燥而成。其视密度在0.5g/CM3以下,遇水易分散溶解。
酶法工艺生产的麦芽糊精与酸法工艺生产的麦芽糊精的最大区别在于不会析出长链直链淀粉成分,故不会产生白色沉淀物,从而大大提高了麦芽糊精的商品价值。
酶法麦芽糊精放在水中,下沉很快,落在水底中,并能逐渐往上返,同时渐渐溶解,其溶解度略低于砂糖,但水化力较强。一旦吸收水分后,保持水分的能力较强。这是麦芽糊精的一个重要特性,在使用中常常会利用这一特性。
目前,我国各地生产的麦芽糊精系列产品,均以玉米,大米等为直接原料,酶法工艺生产的。麦芽糊精广泛应用在糖果、麦乳精、果茶、奶粉、冰淇淋、饮料、罐头及其他食品中,它是各类食品的填充料和增稠剂。

麦芽糖糊精主要特征

具有甜度低,无异味,易消化,低热,溶解性好,发酵性小,填充效果好,不易吸潮,增稠性强,载体性好,稳定性好,难以变质的特性。麦芽糊精含有大量的多糖类,另外还含有钙、铁等对人体有益的微量元素及矿物质,并能促进人体正常的物质代谢。

麦芽糖糊精应用范围

广泛应用于饮料、冷冻食品、糖果、麦片、乳制品、保健品等行业,还可应用于纺织、日化、医药生产中。
(1) 麦芽糊精添加于奶粉等乳制品中,可使产品体积膨胀,不易结块,速溶,冲调性好,延长产品货架期,同时降低成本,提高经济效益。也可改善营养配比,提高营养比价,易消化吸收。麦芽糊精在配制功能奶粉,特别是无蔗糖奶粉、婴儿助长奶粉等中的作用已得到确认。用量5%~20%。
(2) 用在豆奶粉、速溶麦片和麦乳精等营养休闲食品,具有良好的口感和速溶增稠效果,避免沉淀分层现象,能吸收豆腥味或奶膻味,延长保持期,参考用量10%~25%。
(3) 在固体饮料,如奶茶、果晶、速溶茶和固体茶中使用,能保持原产品的特色和香味,降低成本,产品口感醇厚、细腻,味香浓郁速溶效果极佳,抑制结晶析出。乳化效果好,载体作用明显。参考用量10%~30%。适于生产咖啡伴侣的DE24~29的麦芽糊精,用量可高达70%。
(4) 用于果汁饮料,象椰奶汁、花生杏仁露和各种乳酸饮品中,乳化能力强,果汁等原有营养风味不变,易被人体吸收,粘稠度提高,产品纯正,稳定性好,不易沉淀。用于运动饮料,麦芽糊精在人体内的新陈代谢作用中,热能的供人消耗易保持平衡,肠胃消化吸收的负荷小。参考用量5%~15%。
(5) 用于冰淇淋、雪糕或冰棒等冷冻食品里,冰粒膨胀细腻,粘稠性能好,甜味温和,少含或不含胆固醇,风味纯正,落口爽净,口感良好,用量10%~25%。
(6) 使用于糖果时可增加糖果的韧性,防止返砂和烊化,改善结构。降低糖果甜度,减少牙病,降低粘牙现象,改善风味,预防潮解,延长保质期,用量一般10%~30%。
(7) 用于饼干或其它方便食品,造型饱满,表面光滑,色泽清亮,外观效果好。产品香脆可口,甜味适中,入口不沾牙,不留渣,次品少,货架期也长。用量5%~10%。
(8) 麦芽糊精在各色罐头或汤羹汁类食品中,主要的作用是增加稠度,改善结构、外观和风味。用于固体调味料、香料、粉末油脂等食品中,起着稀释、填充的作用,可防潮结块,使产品易贮藏。在粉末油脂中还能起到代用油脂的功能。
(9) 在火腿和香肠等肉制品中添加麦芽糊精,可体现其胶粘性和增稠性强的特点,使产品细腻,口味浓郁,易包装成型,延长保质期。用量5%~10%。
